3 Citrus Fruits Mini Tarts

Ingredients: (for 4 mini tarts)
  • 30g FITNESS Original
  • 15g almonds
  • 15g walnuts
  • 12 dates
  • 1 lemon
  • 10g pistachios for decoration
  • 160ml half-skimmed milk
  • 2 tablespoons cold half-skimmed milk
  • 15g of sugar
  • 1,5 teaspoon cornstarch
  • 1 egg yolk
  • 1 big tonka bean
  • 1 pink grapefruit
  • 1 yellow grapefruit
  • 2 oranges
  • Mix the almonds, walnuts, dates, lemon zest and FITNESS Original into a dough in a blender with an S-shaped blade.
  • Mix again until the dough becomes sticky.
  • Place at the bottom of the mini tarts molds.
  • Spread evenly and press the bottom of the tart.
  • Keep in the freezer for 30 minutes.
  • Heat the milk with the sugar and the grated tonka bean.
  • In a salad bowl, whisk the cornstarch, the cold milk and the egg yolk.
  • Add on top of the hot milk and whisk.
  • Place the whole mixture in a pan. Cook over low heat until it begins to rise
  • To avoid lumps, put the mixture through a strainer or mix in the blender.
  • Fill the mini tart molds evenly with the mixture and keep for 5 minutes in the fridge.
  • Chop the grapefruits and oranges.
  • Place the fruit arrangements in the shapes of flowers on top of the tarts and sprinkle with pistachios and crushed cereals.
  • Consider this recipe as a treat. It will be delicious for sure but should only be enjoyed occasionally as part of a healthy, balanced and positive diet.
